**There are several issues here but this one applies to elderly/LTC in particular. At age 52, with Down syndrome, this lady must be considered elderly. With advancing age, taste thresholds elevate except for sweet - the reason that most elders prefer sweet over other tastes. The important question is this: Is there any rationale for not making nutritious food sweet if it encourages intake? I find great success in LTC by sprinkilng brown sugar, maple syrup etc over meals - in combinations that I wouldn't eat, but then, I'm not the person to be nourished. We have an unreasonable attitude that sweet = non-nutritious. The proof that this is not so is Ensure, being drunk with gusto by millions of elders when it is so cloyingly sweet that the very thought of it makes my tooth enamel start to crumble.
