The Comprehensive Compendium for Dysphagia Management home/study course has an entire section on Cervical Auscultation, including instructions for building a collar with a microphone to amplify the swallow sounds, and examples of computer printouts of swallow function using a similar "McKaig" collar.  This is a 10 hour course offered for ASHA CEUs.
