Hi Lindsey,
I really don't know much about it, but I received the following message with an attachment from SimplyThick after my last post. The attachment lists some references so I tried to include it here but it wouldn't go through.  I will send it to you off-line.
"Although it is true that xanthan gum, like all fiber sources, does bind some
water, human studies show that it is a very small amount compared to the
amount of water in a packet of SimplyThick(r) gel.  The addition of
SimplyThick gel to a beverage actually results in an increase in the total
amount of water available for hydration."

Does it do so more than other thickeners?

I have also tried the Simply Thick gel, but was told by a dietitian
colleague that it binds to liquids, restricting their availability to
the body.
Perhaps RD list members might be able to comment further on this.
